This is important for us to remember when we are either grocery shopping for our families, or even cooking a meal.

It has been estimated that one-third of the food produced globally is wasted. With 35% of this loss occurring at the consumption stage.WRAP (2008) estimated that 61% of food which is thrown away and therefore wasted could have been avoided.

What are the main reasons for consumers wasting food?

1.The food has passed its “date”– this means that the food or drink could not be used because it had passed its “use by” or “best before” date, or the consumer decided it unsafe for consumption. WRAP (2008) estimated that 508,000 tonnes of food is wasted annually because it has passed its “date”.

This data may suggest that there may be a lack of consumer comprehension, in differentiating between use by dates and best before dates. Parfitt (2010) summarized UK research on the factors which cause consumers to waste food; they found that 45% of participants admitted to not…

Yummy Breakfast Parfait

1/3 cup apricot preserves
3 cups sliced strawberries
2 cups low-fat vanilla yogurt
1/2 cup low-fat granola without raisins (such as Kellogg’s)
2 tablespoons slivered almonds, toasted

Place apricot preserves in a medium microwave-safe bowl, and microwave at high for 10 to 15 seconds or until preserves melt. Add strawberries, and toss gently to coat.

Spoon 1/4 cup yogurt into each of 4 parfait glasses; top each serving with 1/3 cup strawberry mixture. Repeat the layers with the remaining yogurt and strawberry mixture. Top each serving with 2 tablespoons granola and 1 1/2 teaspoons almonds. Serve immediately.

I too often find myself saying “I want to lose weight” when I should be focusing on the fact that I DID lose weight and WILL CONTINUE TO get healthier. Nutrition and fitness is a lifelong journey and it isn’t until you acknowledge how far you have come that you can continue to pursue your dreams. Self reflection and goal setting are important when it comes to success and are steps people often overlook which can lead to many people feeling like they aren’t making progress, or even enough progress. Even if you lose a pound, its still progress! Focus on how you feel, how your body looks in your clothes and you will be much happier with yourself

• Orange juice
• Nonfat vanilla yogurt
• Fresh or frozen mango chunks
• Banana
• Fresh or frozen blueberries

Peanut Butter Oat Bites



2 tablespoons unsalted butter
2/3 cup creamy natural peanut butter
1/4 cup confectioners’ sugar
3 tablespoons honey
1 teaspoon vanilla extract
1 1/2 cups Rice Krispies cereal
1 cup quick oats
1/4 cup raisins
1/4 cup mini chocolate chips
1/4 cup finely chopped lightly salted dry-roasted peanuts
Mixed Berries

Arizona–> Nevada–>Utah

Being from Phoenix, Arizona the extent of the nature I have seen is cactus, desert,… and well more cactus. The summer before I went to college, I went on the trip of a lifetime. My roommate and two of our friends crammed into my tiny Honda Civic (packed to the top with all of our camping supplies and set out to explore all of Nevada and Zion National Park.


Our First stop was Hoover Dam. We didn’t stay here very long due to the fact that it was over 100 degrees outside and we still had about 4 more hours of driving to do but it was an amazing sight to say the least.


Our next stop was in Zion National Park where we stayed for about 4 days. We hiked Angels Landing, which is one of the most difficult hikes I’ve ever done (5000ft elevation change in 2.5 miles) and to make matters work it started pouring rain at the top! But it was definitely worth the amazing views! Another hike we did was The Narrows. It was voted one of National Geographic’s top 100 hikes. About 16 miles long, we had to do some rappelling and swimming through the river to finish the hike. Mentally it was a very hard hike for me because of my biggest being water, but i surprised myself by finishing it! A tremendous personal victory for me!


All in all it was an amazing opportunity that not only opened my eyes to all the world has to offer but also allowed me to face my fears and get prepared for my next adventure in 6 days: Maui

The Current Condition of Women’s Healthcare in the U.S.

As a healthcare geographer, my main research focus is studying access to reproductive healthcare in the U.S. The most recent wave of anti-choice activity shows that access to abortion, and contraceptives along with it, are in peril.

The maps below demonstrate the change in access to abortion services in the U.S. over five years. Unfortunately, access to the procedure has greatly decreased in this time. Many anti-choice states have made it their mission to restrict abortion within their borders, thereby making the service unattainable to women, even though the procedure must remain completely legal under Roe v. Wade.

The first map and the map below demonstrate just how quickly state legislatures can mandate new restrictions for abortion providers. In five years, over 230 new restrictions have been enacted across states.
